Topiary Port Wine Magnolia

I"m training a port wine magnolia into a pom pom standard. It"s growing a good central trunk but leaf growth is too thick and gets tangled. I live in Sydney"s humid summers, not good for congested leaves. Is there a plant food that will keep the trunk strong and while keeping the leaves small and undernourished, but not sick? What sized pot is best for a healthy plant? Is there a ratio for trunk height or soil to crown height, and pot capacity?
